Lamb Racks & Pesto






































If you are a meat lover then this recipe might be something for you - vegetarians I have something lined up for you next week! Lamb is my favourite meat and my son Torrez loves it too (however, well done not so rare like in the picture above!). For a quick and simple meal these lamb racks and pesto sauce are so easy to prepare, it's also a great meal to serve
when you have guests over for dinner. 


Ingredients:
Lamb Racks
Basil
Pine Nuts 
Olive Oil
Salt & Pepper

Rub in the salt and pepper on the meat, fry on a high heat in a pan and then place in a 180° oven for 10 - 15 minutes. Depending on how you like your meat done you can leave it a bit longer in the oven. 

For the pesto sauce, blend together chopped basil (one large bunch), together with the pine nuts and olive oil until you get a nice thick paste. Add salt and pepper to taste! 

Serve with some boiled baby potatoes or white bread.
